Balthazar Beet Salad
- Prepare 4 large beets – baked or steamed- (easy to peel when hot)
Mix/Whisk together and drizzle over beets:
- 1 tsp Dijon mustard
- 1/4 cup red wine vinegar
- Salt and Pepper
- 1/4 cup Olive Oil
- Add 1 raw onion
- 3 T grapeseed oil or walnut oil
- 1 cup of walnuts (optional)
- 2 oz of bleu cheese (optional)
- Parsley (optional)
